Cranberry Crumb Bars

1 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
2 1/2 cups all-purpose flour
1/2 cup almond meal*
1 cup cold butter
1 egg
1/4 teaspoon cinnamon
juice of 1/2 an orange
4 cups fresh cranberries
2/3 cup sugar
1 teaspoon vanilla
1 tablespoon cornstarch

   Preheat oven to 375 degrees. Butter a 9-by-13-inch pan.
In a medium bowl, mix together 1 cup sugar, flour, almond flour, salt and baking powder. Use a fork or pastry cutter to blend in the butter and egg. The dough will be crumbly. Alternatively, you can pulse the dry ingredients in a food processor with the butter until pebbly, and then mix in the egg until it all comes together. Pat half of the dough into the buttered pan.
In another bowl, stir together the sugar, cornstarch, vanilla and orange juice. Mix in the cranberries. Sprinkle the cranberry mixture evenly over the dough in the pan.
Add 1/4 teaspoon of cinnamon to the remaining dough, then crumble dough over the berries. Bake for 45 to 55 minutes, or until top is a light golden brown. Cool completely and chill in the refrigerator before cutting into squares. Store in an airtight container in the refrigerator.

*Just toss almonds (blanched or whole) in a food processor until finely ground to make almond meal.

Apple Cinnamon Pecan "Pie" Bars

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup granulated sugar
1/2 cup butter or margarine
2 large eggs
1 teaspoon vanilla extract
2/3 cup Evaporated Lowfat 2% Milk
3 cups peeled, cored and finely chopped baking apples
3/4 cup finely chopped pecans
  1. Preheat oven to 350°F. Grease 13 x 9-inch baking pan.
  2. Combine flour, baking powder, cinnamon and nutmeg in medium bowl. Beat granulated sugar and butter in large mixer bowl until creamy. Beat in eggs and vanilla extract until smooth. Alternately beat in flour mixture and evaporated milk. Stir in apples and nuts. Spread batter into prepared baking pan.
  3. Bake for 40 to 45 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack for 20 minutes. Cut into bars. Sprinkle with powdered sugar before serving.

Makes 15 servings.

Raspberry Crumb Bars

1 c. butter, softened
1 t. vanilla extract
1/2 c. brown sugar, packed
1/4 c. sugar
2 c. all-purpose flour

1/8 t. salt
12-oz. pkg. chocolate chips, divided
14-oz. can sweetened condensed milk
1/2 c. raspberry jam

Combine butter, vanilla, sugars, flour and salt in a large mixing bowl.
Press 1&1/4 cups of mixture into the bottom of a lightly greased 13"x9" baking pan. Set remaining crumbs aside.
Bake at 350 degrees for 10 minutes; remove from oven.
Combine one cup chocolate chips with condensed milk in a small saucepan; melt over low heat until smooth.
Spread over crust. S
prinkle reserved crumbs over chocolate mixture.
Drop jam by teaspoonfuls over crumbs; sprinkle remaining chocolate chips on top of jam.
Bake at 350 degrees for an additional 30 minutes.
Remove to a wire rack; let cool one hour.
Cut into bars.

Makes about 2 dozen.

Easy Brownies


TIME

Total Time: 1 hr 15 mins
Makes: 16 brownies

INGREDIENTS
6 ounces bittersweet chocolate chips (about 1 cup) or coarsely chopped bittersweet chocolate
8 tablespoons unsalted butter (1 stick), cut into 8 pieces
2 large eggs, at room temperature
1 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon fine
salt
1 cup all-purpose flour

INSTRUCTIONS

  1. Heat the oven to 350°F and arrange a rack in the middle. Line an 8-by-8-inch metal baking pan with aluminum foil.
  2. Combine the chocolate and butter in a medium saucepan and cook over low heat, stirring frequently, until melted and smooth. Remove from the heat and let cool slightly, about 5 minutes. (Alternatively, melt the chocolate and butter in the microwave, stirring every 30 seconds.)
  3. Combine the eggs, sugar, vanilla, baking powder, and salt in a large bowl and stir with a rubber spatula until just evenly incorporated. Add the chocolate mixture and stir until evenly combined. Add the flour and fold in until just incorporated, about 20 strokes (no white streaks should remain).
  4. Pour the batter into the prepared pan, push it to the edges in an even layer, and smooth the top. Bake until a cake tester or skewer inserted into the center comes out clean, about 25 minutes. Remove to a wire rack and let the brownies cool for at least 20 minutes.
  5. To remove the brownies, grip the excess foil and pull it out of the baking pan. Transfer to a cutting board and cut the brownies into 2-inch squares.
